Created in the early 20th century in Puglia as a way to use mozzarella trimmings together with cream, wrapping them in a pouch of the cheese itself.
A pouch of hot-stretched mozzarella is formed and filled with stracciatella (strands of mozzarella in cream). It's closed by hand, like a little sack.
Fresh, sweet and lactic, with an interior of silky, delicate creaminess.
Mild and milky, very clean.
Serve it whole at room temperature and open it at the table so the heart spills out.
Star of signature caprese salads, over pizzas straight from the oven, with roasted vegetables or pasta.
Keep it in its whey and refrigerated; consume as soon as possible, ideally the same day.
Very little: it's best consumed within 24–48 hours of being made.
